Even though it is August, here in the Midwest, it feels like Autumn! I know, it will get warm again but while we are having this cold snap, I was in the mood for CHILI!
I am not a fantastic cook, but my chili is something that my husband really likes and luckily, it's even better leftover so I make lots!
This recipe is very simple and since I use the crockpot, is something you can throw together, set, and forget!

Here's the recipe:
I used 4 cups of fresh tomatoes - you can use canned if you don't have fresh but just make sure that they have very few ingredients on the label.
Then I added a small, diced green pepper for a little added flavor.
Next, I added a can of chili beans.
And then a can of kidney beans.
Then I added my spices - choose what you like or don't like and you may choose to add a bit more:
1 tsp minced garlic
2 Tbsp chili powder
1 tsp cumin
1 Tbsp crushed red pepper
Then I mixed in the meat. We actually have farm-fresh pork available so I used 2 pounds (my husband likes his chili really meaty) but you could use lean beef or ground turkey for this part.
I also added 1 cup of tomato juice because I didn't think it looked juicy enough. You can use fresh tomato juice or lower sodium juice.
Set the crockpot on the low setting for 6-8 hours and dinner is served! We like our chili with a sprinkle of cheese and a dollop of plain greek yogurt (in place of sour cream).
