I have super picky eaters in my house so I almost cringe at the thought of trying out a new recipe - especially when it's a healthy one!
I learned a long time ago never to reveal my secrets until after they eat it but when I took the meatloaf out of the oven, it was obvious. "It's turkey meatloaf?" is exactly what my 8 year old said. He declared he wasn't eating it and would rather have the potatoes that I made without meat.

Granted, it didn't look like your everyday meatloaf because it was made of turkey but how did it taste?
Actually, after I cut myself a slice, I have to admit, it didn't taste bad. In fact, it tasted really good.
I told my 8 year-old to give it a try. Turns out he didn't like it. HE LOVED IT!!!
Win for mom!
After the meal I went to go put what was leftover in the refrigerator for tomorrow but look! Only a half of a slice left (note: the older son finished it off before bed).
What started as an attempt to remake my meatloaf recipe into something healthier turned out to be a winner and is certainly going in the rotation!
Here's the recipe:
1 1/4 pounds ground turkey
1 egg
1 cup quick oats
1/4 cup tomato juice
Mix together and put in loaf pan. Bake at 350 degrees for one hour.
Check temp to make sure it is done inside (mine was after an hour but all ovens vary).
